Going Back to Vegan as in Food, Not my Ex
I am on Day 3 of a vegan diet. So far, it’s an incredible explosion of flavors and textures that I’d long forgotten about- fruits other than apples and bananas, veggies, whole grains, and all kinds of smoothies. I’d lost fifteen pounds on the Slim Fast program recently but was experiencing energy crashes. Recently, two friends shared how they’d gone vegan and felt chock full of energy and were losing weight. I went on Netflix and watched “Forks Over Knives.” THAT was the final boost I needed to give a vegan diet another try. I’d been a vegan way back in college, but didn’t do something right (was lacking probably B-12). I returned to eating meat and have struggled with my weight ever since. Hopefully, I’ll get it right this time.
BTW: My ex’s name is Vegan. Our company’s name, Vegan Metal Fabricators, made for a lot of confusion at trade shows. People would come up to our booth and ask about the name, especially when we did shows in California. I would tell them straight-faced that we only hired vegans. Most of the time I got nods of approval. I digress…
Worked for several hours yesterday building a much larger solar dryer for duckweed, borrowing from all kinds of designs to morph into my own. My sixteen year old son pitched in and we got a lot accomplished. Thanks, Stephan! Also, thanks to Paul Skillicorn for his great input.
Good for you 🙂 I went vegan about a year ago and love all the new foods. I’ve got some of my recipes here if you are interested http://herbifit.wordpress.com/spice-rack/
Looking forward to following your journey 🙂

You go girl! Love them veggies and fruit. I don’t do grains other than organic, gluten-free, non-GMO brown rice. It makes a HUGE difference! BTW…looking forward to dinner soon… Maybe I’ll cook you a groovy, green dinner 🙂
